Ingredients

Serves : 4
  • 3 nos chicken breasts


  • 1/2 nos red pepper


  • 1/2 nos yellow pepper


  • 1 1/2 cups whole grain rice


  • 1/2 nos onion


  • 3 tsp salt


  • 2 tsp pepper


  • 3 tbsp curry powder


  • 1 nos chicken stock cube


  • 3 tbsp flour


  • 500 ml water


  • 1 tbsp mango chutney


  • 25 gms butter

Directions

  • Set the rice to boil with 2 tsp Salt
  • Cut up your chicken into bite sized chunks
  • Dice the onion into small pieces as to not overwhelm the curry
  • Chop the peppers up into medium pieces
  • Fry your onion until soft and add your chicken with the peppers
  • Into a sauce pan add your butter and melt it, once all melted add in your flour slowly
  • Once the butter and flour comes together add the water a little bit at a time until it feels like a smooth slightly thickened soup
  • Add your chutney, salt,pepper and curry and mix until no lumps are left
  • Add the chicken with the veg into the curry and leave to simmer for a few minutes stirring occasionally
  • When the rice is done, drain and plate you food rice first with a little well in the middle and pour your chicken curry into the well as to hold more curry throughout the rice
